PIE!


Apple Rhubarb Pie With Crumb Topper
5-6 Apples, peeled and diced
1-2 C. Rhubarb, in 1/4" chunks (depending on how tart you like it depends on how much rhubarb you want or have)
3/4 C. sugar
1 t. Cinnamon
1 Pillsbury Pie crust, roll out kind
Crumb topping: 1/2 C. sugar, 3/4 C. flour, 1/3 C. butter Cut in sugar, flour and butter to make crumb topping.
Place pie crust in pie plate, mix apples, rhubarb, sugar and cinnamon in bowl and stir, add 2 TB. flour and stir in.
Pour mixture into shell and top with crumb topping. Place pie plate on baking sheet lined with foil for spillage! Bake 1 hr. at 400* delish with vanilla ice cream!

Puppy Chow!


Puppy Chow! A delicious chocolatey rich snack! A little hand ful is enough to satisfy any chocolate craving!
1 C. Peanut butter
1 C. Chocolate chips
1 stick butter
8 C. Chex cereal, any flavor (I use Crispex too or Wheat Chex)
2 C. powdered sugar
Prepare a large paper grocery store sack by pouring 2 C. powdered sugar into it. Melt Peanut butter, Choc. chips, and stick of butter in microwave 20 seconds at a time until you can stir it smoothly, about 1 min. Pour cereal in a large bowl and pour melted choc. and toss until covered with melted chocolate, pour the chocolate covered cereal into the paper sack of powdered sugar, fold bag and toss lightly until it's covered with sugar! (If you didn't have a paper sack you could use another large bowl seperately and place the lid on and turn the bowl lightly until covered! Voila a delicious treat!!

Salad!


Don't you love salad weather? when you feel like making a really nice salad for yourself? I did last week.....my fav. is a hot piece of grilled chicken off the George Foreman Grill still warm, on my salad....and so many different toppings to choose from! I love love love 1/2 an avocado on mine....I love to put shredded cabbage on it too for an Asian flair (you can just buy those preshredded bags!) With Asian salads I love Catalina.....for Chef salad I've got to have Thousand Island! I love all salads.....I'm making a tossed salad base salad next week for Memorial Weekend that has chicken, dried berries, snow peas....and many more goodies with a Teriaki style Vinaigrette! yum I'll have to post that later!
SO ENJOY A NICE SALAD SOON!!! and use Lowfat dressing! ha you don't want to ruin all those good veggies with high fat dressing!

Healthy snacks!


Guacamole! a favorite snack, that can be healthy if you can limit your portions! haha
1 large avocado (you want it soft to the touch if you want to use it right away, firm if you aren't making it for a few days, but not mushy.) Don't be afraid if it looks quite dark those are good IF they aren't mushy!
2 green onions, sliced thin
1 Tb. sour cream
2-3 dashes hot sauce
1 ts. lemon juice
salt and pepper to taste
diced tomato
Cut avocado in half and scoop out, mash with a fork (I like mine a bit chunky) add the creamy ingredients and then the diced....add more salt/pepper/hot sauce as you like! enjoy! Serve with baked Tortillas or serve on Fajitas or Tacos! mmm mmm good stuff.......Mike and I have been known to double this and eat it for supper! mmm It doesn't save well so you need to eat it up unless you can pack it airtight!

Fun Ideas!


You can go to this blog and read an entry this gal made about showing off your kitchen......each Friday she has bloggers comment and post a link of their kitchen or whatever room she's showcasing that week! I had a BALL looking at many different kitchens and thought you might too! I got some cute idea.....what a small change adding a small lamp or glittery candle does to soften and warm a room! and you won't get over this gal's own kitchen...she has fruit in these gorgeous glass jars on her counters! wow I think I'd eat more apples if my fruit looked like that! I wonder if it's real or fake fruit...oh well doesn't matter it looks so cool! so ENJOY!!!

This gal also has the most touching story about her baby Harper coming into the world! somehow I got a prayer request link for her when her baby was born and have followed her ever since. You can go into older posts to read her story...she is a lovely young sweet southern Christian mama!
